MICHELIN-STAR Thai chef Jay Fai of the restaurant of the same name that grew from a street stall when first awarded one star in 2018 today (Oct. 28) announced that she will be retiring next year, Amarin TV said this afternoon.
Jay Fai, whose real name is Mrs. Supinya Junsuta, is internationally famous and has been continuously awarded one Michelin star for seven years in a row.
She said that it is very difficult running the restaurant as the ingredients require meticulous attention. She gets up at 7 a.m. to check these ingredients and if they are not up to standard or not to her liking they are immediately sent back.
She added that she does not plan for her daughter, Ms. Yuwadee Junsuta, to take over her business but would be happy to share her recipes and teach those who are interested in trying them out.
However Tourism Authority of Thailand Governor Ms. Thapanee Kiatphaibool said if it is true Jay Fai is retiring next year then it is a great pity because her restaurant is famous both in Thailand and abroad.
She is considered a soft power helping promote tourism but is shutting shop because of old age and the responsibility of having to maintain the quality of the ingredients to the Michelin standard, the TAT chief added.
On the Michelin guide website it is written, “Jay Fai has long been a street food icon, and for good reason — the begoggled chef’s signature crispy, golden-brown crab omelettes are simply unparalleled. If you’re looking for another reason to love the local legend, then also try her excellent stir-fried noodles with seafood and gravy. This is a deservedly popular spot and they don’t take bookings, so be sure to arrive early and be prepared to queue.”
